My mom use to make a very tasty and rich fruit cake but it required a lot of preparation and long baking time. The preparation includes cutting and covering the baking tin with multiple layers of paper and then four hours of careful baking to avoid overbaking and burning. Doing some research on the internet I found fruit cake receipes that were prepared with less effort and cooked using a pressure cooker. Although the cake still pressure cooks for one and a half hours, preparation is much less effort. You only require to grease the pan and the pressure cooker ensures a moist cake that’s unlikely to overcook or burn. I used a Instant Pot in this receipe but any standard pressure cooker will also work.
