- 100 ml golden syrup (140 g)
- 50 ml strong coffee
- 2 tsp ground cinnamon
- 2 1/2 tsp ground ginger
- 2 tsp ground cloves
- 150 g butter
- Peel from ½ orange
- 450 g plain flour
- 1 1/2 tsp baking soda

- Mix sugar, golden suryp, coffee and spices in a saucepan and bring to a boil. Take off the heat, add butter and stir until it's fully combined.
- Add orange peel and let the mixture cool down until it's nice and creamy.
- Mix flour and baking soda and add to your spiced sugar and butter mix. Bring it together to a nice dough (you'll need to use your hands) and wrap it up in some cling film. Let it rest in the fridge overnight, or preferably a bit longer, taste develops more over time!
- Roll the dough out thinly and cut shapes out with a cookie cutter. Bake in the oven at 200 degrees for 8-10 minutes.
- Note: This recipe makes about 120 biscuits, but the dough will be fine in the fridge throughout all of December, so no need to use it all at once. Also perfect for making gingerbread houses 🥰
